Tasting Note
The nose is first marked by aromas of roasting. A little sweet coffee at first, then a rather strongly burnt wood. Notes of roasted nuts emerge, reminiscent of a fresher wood as they lose their charred envelope.
On aeration, we find the intensely caramelised nutty notes that make Demerara rums so charming. Here, they are tenderly coated and gently spiced.
The palate is gripped by a heavily toasted oak barrel, whose burnt surface brings an almost mineral, charcoal feel. From this darkness emerge notes of liquorice, with a juicy stick of concentrated juices. The intense core of nuts is present on the mid-palate, abundantly caramelised and coated.
The finish has a smoky, roasted touch, but above all a lot of roundness.
